Comparison of Quality Characteristic and Antioxidant Activity of Enteromorpha prolifera from Seosan and Muan in Korea

Abstract
This study analyzed and compared the proximate composition, physicochemical characteristics, and antioxidant activities of Enteromorpha prolifera, a perennial algae of seaweed, from Seosan (EPS) and Muan (EPM) in Korea. The results of the proximate compositions showed that the carbohydrate (39.73%), crude fat (4.24%), crude ash (21.45%), crude fiber (5.14%) in EPS were higher than those in EPM, whereas the moisture (11.61%), crude protein (28.88%) of EPM were higher than those in EPS. EPS contained sucrose, glucose, fructose, and maltose, whereas those in EPM were not detected. In terms of the physicochemical property, the pH of EPS was lower than that of EPM. In the Hunter color system, the L (lightness) and b (yellowness) values were higher in EPS than in EPM, whereas the a (redness) value was lower. The total amino acid contents were higher in EPM than in EPS. The total and unsaturated fatty acids contents were higher in EPS than in EPM. EPS contained DHA (C22:6n-3) (0.04 g/100 g fatty acid). EPM showed higher levels of Ca (1,721.7 ppm), Mg (2,241.0 ppm), and K (6,202.0 ppm), whereas EPS contained higher levels of Fe (339.5 ppm), Mn (7.1 ppm), and I (8.6 ppm) than EPM. Chlorophyll and phycocyanin, which are major pigments in E. prolifera were higher in EPS. The total phenol/flavonoid contents, 1,1-diphenyl-2-picrylhydrazyl radical scavenging activity, and superoxide dismutase-like activity were higher in EPS. Therefore, E. prolifera has abundant nutrients and is a good source of functional healthy food. In addition, EPS has higher antioxidant activity than EPM.
